Sausage and Pepper Sub

Quantity: 4 sandwiches


  • 4 sweet or hot italian sausages

  • 4 6 inch hero rolls, split and warmed

  • 2 tbsp olive oil

  • 1 large onion, thinly sliced

  • 3 garlic cloves, minced

  • 1 large red bell pepper (cut into thin strips)

  • 1 large green bell pepper (cut into thing strips)

  • 1 teaspoon dried oregano (optional)

  • 1 tbsp balsamic vinegar (optional)

  • Prepperjack or monetery jack cheese (shredded) for serving

  • Salt and black pepper to taste


  • Prick italian sausages several times with a a fork or pairing knife ( to allow release of juices during cooking)

  • Cook sausages slowly in a large skillet over medium heat until browned and cooked throughout.

  • Removes the sausge to a plate. Pour off all but 2 tablespoons of fat in the pan.

  • To the pan add; olice oil, onion slices, bell pepper slices, garlic, dried oregan if desired, salt and black pepper to taste.

  • Cook over low heat, stirring often, until the peppers are very soft, about 25 minutes.

  • If desired, stir in 1 tbsp balsamic vinegar

  • Split and warm up hero rolls.

  • Return the sausages to the pan and heat through, about 3 minutes.

  • Spoon the mixture into warmed up hero rolls.

  • Serve with shredded pepperjack or monetery jack cheese.
